8largepotatoes (peeled)cut into large wedges (6-7 wedges per potato)
3clovesgarlic
½cupolive oil
1cupwater
1tbsporegano
1largelemonjuiced
feta cheeseoptional
1cubechicken bouillon
Instructions
Preheat oven to 400°F. Prepare a baking pan with non-stick spray.
Put all the ingredients into the baking pan.
Toss ingredients to mix thoroughly
Bake for 20 minutes.
Give them a stir to bring the white underside up, season very lightly with salt and pepper and a sprinkling of oregano. Add 1/2 cup more water if pan appears to be getting dry and pop back into oven. Bake for another 25-30 minutes.
Remove from oven and sprinkle with feta cheese if using (recommended).
Sprinkle more lemon juice over potatoes if preferred (optional)
Notes
The garlic will drop into the water/oil solution but its flavour will permeate the potatoes.
