Lebanese Meat Pies

Materials

  • 1 recipe Basic Lebanese Bread Dough
  • 2 lbs lean lamb or beef
  • 2 large tomatoes finely diced
  • ½ cup parsley finely chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp allspice
  • 1 medium onion
  • ¾ cup pine nuts

Instructions

  • Prepare Basic Lebanese Bread Dough
  • While dough is rising, combine all filling ingredients except butter. Mix well.
  • Using a rolling pin, roll out half of the dough to ⅛" thickness on a lightly floured surface. With a 3" cookie cutter, cut out individual circles. (Save dough left from cutting. Roll and re-use)
  • Place 1 heaping Tbsp. of filling in centre of each circle. Bring up three edges of dough to form a triangle, leaving a small opening in the centre. Secure edges of dough by pinching tightly.
  • Place on lightly greased cookie sheet. Bake in preheated oven at 450 degrees for approximately 10-15 minutes or until golden brown. Brush tops with butter.
