Definitely a cut above the usual roasted potatoes! The unique thing about Greek Lemon Potatoes is that they are cooked in a heavily flavoured lemon garlic broth so they suck up all that flavour before roasting to golden perfection.

Instructions
- Preheat oven to 400°F. Prepare a baking pan with non-stick spray.
- Put all the ingredients into the baking pan.
- Toss ingredients to mix thoroughly
- Bake for 20 minutes.
- Give them a stir to bring the white underside up, season very lightly with salt and pepper and a sprinkling of oregano. Add 1/2 cup more water if pan appears to be getting dry and pop back into oven. Bake for another 25-30 minutes.
- Remove from oven and sprinkle with feta cheese if using (recommended).
- Sprinkle more lemon juice over potatoes if preferred (optional)
Notes
The garlic will drop into the water/oil solution but its flavour will permeate the potatoes.
